CRUST WET INGREDIENTS
3/4 cup unsalted butter cold and cubed
1TBSP maple syrup
1 tsp vanilla
2 TBSP apple cider vinegar
2-3 TBSP water ice cold
CRUST DRY INGREDIENTS
1 cup almond flour
1 cup oat flour
1/4 tsp salt
FILLING WET INGREDIENTS
8 medium apples sliced
1 TBSP lemon juice
3 TBSP maple syrup
FILLING DRY INGREDIENTS
1/2 cup coconut sugar
2 TBSP arrowroot flour
2 tsp cinnamon
1/2 tsp nutmeg
INSTRUCTIONS
In a large mixing bowl, whisk together the flour and salt. Add the cold, cubed butter using your fingertips to work the dough to coarse crumbs. Add the maple syrup, vanilla extract, and apple cider vinegar. Slowly add the ice cold water, one TBSP at a time, mixing gently until the dough starts to come together. Divide the dough in half, shape each half into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
Place the sliced apples in a large mixing bowl and drizzle with lemon juice. Add the coconut sugar, maple syrup, arrowroot flour, cinnamon, and nutmeg, and mix well.
Roll out one disk of dough transfer it to a 9-inch pie dish. Cut off the excess. Add the filling. Top optional.
