Blueberry Oat Muffin

WET INGREDIENTS

2 eggs, slightly beaten

1/3 cup pure maple syrup

1 teaspoon vanilla extract

1/2 cup unsweetened almond milk (or any dairy free milk of choice)

1 TBSP olive oil

1 tsp apple cider vinegar (or fresh lemon juice)

DRY INGREDIENTS

1 cup + 2 tablespoons gluten free oat flour

1 cup packed super fine blanched almond flour

1/4 teaspoon salt

3/4 teaspoon baking soda

INSTRUCTIONS

Mix Wet Ingredients. Mix Dry Ingredients. Combine. Fold in 1 cup fresh or frozen blueberries. Bake @350.
