Blueberry Cornbread

WET INGREDIENTS

2 eggs

1 cup unsweetened yogurt

1/2 cup maple syrup

1/4 cup olive oil

1 TBSP lemon zest

1 tsp vanilla extract

3 cups blueberries- frozen

DRY INGREDIENTS

1 cup cornmeal

1 cup almond flour

1 cup rolled oats

1/2 cup flaxseed meal

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

INSTRUCTIONS

Mix wet ingredients [except blueberries]. Mix dry ingredients. Combine. Gently fold in berries.
