WET INGREDIENTS
4 large eggs
1/2 cup unsweetened nut milk
DRY INGREDIENTS
2/3 cup lupin flour
1/4 cup arrowroot flour
1 tsp zaatar or oregano
1/4 tsp salt
1/8 tsp pepper
INSTRUCTIONS
Mix wet ingredients. Mix dry ingredients. Combine.
Preheat oven to 425 and put your cast iron pan in the oven at the same time to heat up. Remove cast iron skillet from the oven and pour in 3 tbsp olive oil, then your batter. It will begin to sizzle. Put the skillet back in the oven and bake for 19-22 minutes, until golden brown. If enjoying plain, sprinkle with coarse salt, cut and it is ready to eat! If topping like a pizza, sprinkle grated cheese while flatbread is still hot and top as desired.
