Bean Bowls

INGREDIENTS

Black Beans

Brown Rice

Red onion

Bell pepper

Avocado

Shredded cabbage

Pico de gallo

Lime wedges

Cilantro leaves

INSTRUCTIONS

Cook black beans in instant pot. 1/2 cup raw black beans yields approx 1 cup cooked black beans. Add beans to instant pot with 3 inches deep hot water. Cook for 20 mins and allow a 10 min steam release. Strain and rinse with cool water.

Short grain brown rice in instant pot as well. 1 part rice to 1.5 parts hot water, aka 1 cup rice to 1.5 cups water. Cook for 20 mins and 10 minutes steam release.

Add grilled red onion, grilled bell pepper, avocado, shredded cabbage, pico de gallo, lime, cilantro…etc!
