Chicken breasts

Bread crumbs

Short Grain Brown Rice
INSTRUCTIONS
Cut a chicken breast into four pieces lengthwise. then dip in beaten egg, and roll in bread crumbs.
Bake on parchment paper at 400 degrees for approx 20 mins or until internal temp reads at least 165°.
Cook Short grain brown rice in instant pot. 1 part rice to 1.5 parts hot water, aka 1 cup rice to 1.5 cups water. Cook for 20 mins and 10 minutes steam release. Top rice with sautéed spinach, and steamed carrots.
