Quinoa Pancakes

WET INGREDIENTS

4 eggs

2 cups Oat Milk

2 tsp vanilla extract  

1 TBSP olive oil

DRY INGREDIENTS

3 cups cooked quinoa

2 cups spelt flour

1/4 cup coconut sugar

2 TBSP baking powder

1 tsp cinnamon

INSTRUCTIONS

Make batter at least 1 hour in advance, or the night before. Mix wet ingredients. Mix dry ingredients. Combine.
