Granola

WET INGREDIENTS

3 TBSP olive oil

3 TBSP honey

DRY INGREDIENTS

2 cups organic rolled oats

1 cup whole, raw almonds, roughly chopped

1/2 cup raw cashews, roughly chopped

1/2 cup whole, raw pepitas

2 TBSP unsweetened shredded coconut [optional]

1 tsp cinnamon

INSTRUCTIONS

Mix Wet Ingredients. Mix Dry Ingredients. Combine. Bake @ 325 F. Once the granola has cooled slightly, stir in 1/2 cup cranberries or raisins if adding.

OPTION 2

DRY INGREDIENTS

1/2 cup unsalted cashews

1 cup oats

1/2 cup brazil nuts

2/3 cup slivered almonds

2.5 TBSP flaxseeds

2 TBSP amaranth

1 tsp cinnamon

1/4 tsp salt

WET INGREDIENTS

3 eggs

INSTRUCTIONS

Mix dry ingredients. Whisk 3 egg whites until stiff peak forms. Combine. Bake @ 300.
