WET INGREDIENTS
1/2 cup butter infused olive oil or lemon infused olive oil or butter
2 eggs
1/2 cup cup maple syrup
½ cup coconut milk
1 tsp organic lemon zest
2 TBSP lemon juice
DRY INGREDIENTS
1 cup almond flour
1 cup oat flour
1 tsp baking soda
1/4 tsp salt
INSTRUCTIONS
Mix wet ingredients. Mix dry ingredients. Combine.
Bake @ 350
If bundt cake- glaze:
1 TBSP maple syrup
2-3 tsps lemon juice
2 TBSP arrowroot starch
Whisk and drizzle
If cake- frosting
1/2 cup [1 stick] unsalted butter
2 cups powdered sugar
2 TBSP plain Greek yogurt
1 tsp vanilla
Use a handheld mixer to beat the butter until creamy. Add the sugar and beat until incorporated.
Add the yogurt and vanilla and beat until fluffy.
