Gaucomole

INGREDIENTS

3 avocados (pitted, pealed and mashed)

Juice from half a lime

1/4 cup of cilantro leaves, chopped

1/2 a small red onion, chopped

1/2 cup diced roma tomatoes (ribs and seeds removed)

Sea salt to taste

INSTRUCTIONS

In a medium bowl, mash together the avocados, lime juice, and salt. Fold in onion and cilantro. Then fold in tomatoes.

Refrigerate 1 hour for best flavor, or serve immediately.
